Prosciuttificio Gran San Bernardo
Roasted ham Jambon alla brace is a renowned delicacy in Valle d'Aosta. One of the best is made by Mathieu Cerisey in his mountain prosciuttificio at an altitude of 2,473 m above sea level. He marinates the fatty hams from local pigs in a mixture of mountain meadow honey, herbs, and local craft beer. Then he slowly steams them all day, and finally roasts them in a wood-fired oven from the surrounding forests, basting them with beer until a crispy crust forms.
