Hams and Salamis

Just like with cheese makers, we ensure that the meat from the ham and salami producers we work with comes from their own farms, where animals grow slowly and naturally without antibiotics or hormones, are fed only natural, GMO-free feed and are slaughtered directly on the farm without stressful transport. Some of our suppliers raise valued native breeds such as Cinta Senese, Sambucano, Maremmana, Fassona or Podolica, usually semi-wild in the open, where they graze on herbs, beech nuts, and acorns, giving the meat a stronger flavor, more nutrients, and a darker color. Producers who do not have their own herds buy meat only from proven Italian farms that meet the strictest conditions.
