Fish
Our suppliers of fish specialties are fishermen from Sicily, who fish around the island and manually process mainly anchovies, and small family breeders from Trentino. In Trentino, they breed trout and char in clean, very cold water from mountain streams, where the fish grow much more slowly than in common commercial farms, and their meat is thus firmer and more compact. They only use natural feed without GMO and process the fish directly at the breeding site.
