La Malga del Re
The hidden mountain village of Bagolino, west of Lake Garda, has been offering the world the cheese jewel Bagòss for centuries. From unpasteurized milk with a small addition of saffron, a form similar to gold is created, weighing about 10 kg. Already in the 16th century, the Venetians sent for this cheese so that it would not be missing from their table as something special. Gianluca Buccio, with his family and a stable of about 50 cows, produces this gem in two variants: younger and milder, aged about 1 year, and a three-year-old distinctive and robust Bagòss.
