One hundred twenty goats in the abandoned village of Borgata Podio led by the Alifredi family give excellent milk, from which, not only thanks to gentle handling but also good aging, it is possible to make the jewel of Piedmontese goat cheeses. In fresh, medium-aged and well-aged forms, cheeses from this really small reality are always perfectly balanced and charismatic.
