South of Putignano in central Puglia stands a farm on a hill. It has been standing there for decades, with cows, sheep, donkeys, and both light and black pigs grazing around. It is a farm as it should be. And what is more, in the midst of this incredibly clean reality is a small dairy, which every day transforms freshly milked milk into great cheeses like burrata, mozzarella, scamorza, and provolone. The milk travels exactly 30 meters to the dairy.
