Tino Paiolo
When young Davide Fiandino took over his father's family farm in the Valle Maira valley, the first thing he did was rename it to Tino Paiolo. While coming up with the name, Davide was inspired by two containers (tinozzo and paiolo) originally used in cheese making. Today, they have been replaced by much larger vats, and Davide's herds of cows and sheep have grown as well. With more than 200 animals, he produces the typical Piedmont cheeses for this valley, led by the unforgettable Castelmagno, which mature on wooden planks in cellars under the production facility located in the beautiful Valle di Castelmagno.
